At Twitch this is the account security and I don't know what that means, so what is being done there.

If you set this you have to register with everyone, enter a code that will be sent to you by email.
You just need a second factor to register. This is likely to mean an authenticator code that you can generate using appropriate apps on your smartphone, for example (Authy, for example).
You don't need that if you're not a big YouTuber / Twitcher
2FA always makes sense, especially for online services.
The two factor authority secures your account 'double', so to speak. There are two factors. I think the password factor and the code factor. If you want to know more, feel free to google it. LG Karim H.
