GTA V is currently no longer in the gamepass. The games there change every few months, but there's always enough time to play them and before they are removed you can also buy them cheaply.
Exceptions are titles that are published by Microsoft itself. Games like Halo, Gears or Forza remain permanently in the gamepass and are also available immediately when they appear. So you don't need to buy the new Halo or Microsoft Flight Simulator when it comes out, but can play it immediately via the gamepass.
