I would like to get the Java version from the Minecraft website and not the Microsoft 10 version, can I do that with an Xbox voucher or does it not work?

No sorry that doesn't work as far as I know. However, if you log into MC Java with your X-Box account, you can pay for in-app purchases with an X-GIFT CARD.

You can only play with the Java version on the X-Box if you have a Microsoft account, which you need now anyway if you want to buy an account.
