It would be very unlikely that someone would hack you on the X-Box because they would have to be around you. It is of course still possible but not normally.

The fear is completely unfounded, something like that is not possible because the other player has no information about you at all (unless your nickname is your real name). Even with the help of mod menus, you won't get the other person's IP because GTA is too big and well-known a game for that (that would be a violent exploit that Rockstar Games would never let go of). As far as I know, email and password are required to access the account, which is why it's not that easy (since the other player doesn't know either email or password). Otherwise activate 2FA and use an at least 8-digit password and you are completely safe.
