My question is if I play FIFA 20 pier to pier against a friend as well as FUT Champoins or Rivals should I unlock any ports to get a better ping?

By unlocking ports, the ping will not improve, no.
The question was not how it works, but whether the ping is better.
I would try, but it goes fast. But you have to do both.
We use a speed haven, but with the Fritz box it will be similar: look at the thing times, with the sticker with the WLAN key and the whole stuff. There's a link to a page on which you can then edit all the settings, such as what ports you use or the WLAN name etc. Example of mine: speedport.ip and then there with the device password (from the sticker) there log.
Replace the WLAN cable, that's right!
