Bought myself a car in single player, got it and then when I was dead the car wasn't in the garage or at the police station where else could it be or is that a bug? The car was not insured

You could take a look at the depositary. That's where you can do the towing missions. Or you look at the map to see if your car symbol is there somewhere. Of course it is not insured, you don't have to write that. There's no insurance in GTA V, only in GTA Online. "At the police station" is pretty inaccurate because there are several police stations.
