Nowadays you can no longer buy Cat 1 to Cat 4 as a network cable. Cat 5 or Cat 5e is completely sufficient. Cat 6 is ok, but oversized. Cat 7 and Cat 8 are worthless because only the cable, but not the connector, can reach these categories. A Cat 7 or Cat 8 cable with the usual network connectors (RJ 45) also only has Cat 6. Cat 7 and Cat 8 are a waste of money.
Ultimately, the cable is completely uncritical. Everything that is commercially available can manage 1000 Mbit / s (not 1000 / mbit, that's nonsense) over 100 meters.
Cat 5e can already do Gigabit Ethernet. If you have longer distances (> 10m) you could maybe use Cat6. What else is not worth it.
