Afterbirth only adds new content to the main game (additional random room variants, characters, enemies, items, bosses, layers), but does not replace it. You always play the main game, just with additional content. And they can't be deactivated separately.
But when Afterbirth is at the front of the main screen, I have the mode where I'm in a room and have to go to a button to spawn with opponents where I have uninstalled the Afterbirth DLC Stand in front of Rebirth with the mode where you have to go through different rooms.

One is the standard / adventure mode, the other is the greed or super greed mode. These modes can always be selected separately in the main menu.
