I bought the Xbox Game Pass Ultimate today for 1 euro for 3 months and noticed that some games only offer a discount. E.g. Astroneer or Hollow Knight. Is that normal? Most of the Hollow Knight is a measly 3 euro or so. Could it be because I only renewed my membership a few minutes ago, or are these games really just discounts?

You are certainly referring to the yellow print save 3 euro, that is the price for people who want to buy the game properly despite the gamepass who then pay only 12 euro instead of 15 euro
Why ever you should do that
Does not affect you as a Gamepass subscription user, you can play everything that has Gamepass on it at no additional cost
You have a certain number of games in the GamePass. You can find it either on the XBOX in the GamePass directory on the desktop or, if you have the GamePass Ultimate, in the XBOX app.
And you also get discounts on some games.
