I played Red Dead Redemption 2 "ready" a couple of days ago… The game really got me hooked and I loved it! Have been looking for months now because it is so good!
Now I would need a new game, so to speak, because I just really enjoy playing Xbox after work, that's so relaxing… I like to play adventure games, with a lot of "story", open world, with not too much noise, so nothing where you just "rumballert" all the time. I also like So fantasy games. (I'm very demanding, I know)
Now I wanted to ask if you have any suggestions, what could I try so? Maybe someone has the same taste as me and has played some games in the right direction?

The sorcerer series is always worth a look, but unfortunately the first part is not available for the console. Darksiders and Darksiders 2 are fun as well.
Although Skyrim is open world, but stoytechnisch not worth mentioning.
To Final Fantasy I can't say much, I do not like the round based in fighting. The Fable series has barely aged, if there are those for the One, I do not know.

The witcher 3 for me the best game ever would have to meet your expectations. Anzusass assassins creed series is very good especially the new ones (origins & odyssey) have a lot of playing time and a huge open world.
Whatever you will like and rated extremely well is elder scrolls 5 Skyrim. Possibly even fallout even if the newest parts a little weak in the face of the parts to ps4 / xbox 360 times.

With RDR2, you have actually played through what is currently the best and most intense open world adventure game. A true masterpiece in my eyes.
Almost as good is and even with German synchro, The Witcher 3. Here, however, is fought with sword and magic and there are role-playing games. The world is beautiful and the side quests are varied.
By far, Assassin's Creed Odyssey follows. Likewise with sword as well as bow and arrow one fumbles oneself through ancient Greece, including separate download of a museum mode which explains the life of the ancient Greeks in detail.
Fallout 4 also falls into a similar branch of yours. Here, the focus is on shooting in the post-apocalyptic world. As usual in the series Story and Nebenquest are sometimes funny told but technically the parts are a bit difficult.
Mass Effect Andromeda is the last and worst part of a great scifi series. In itself, however, still a great game with decent size and also playful and technically (in the meantime) great.
Hope this gives you an overview and helps you on. Of all the games mentioned, there are also the predecessors on the One and these are just as good or sometimes even better.

Your games come from almost all, albeit all good titles, the 360 era. Thus, they are technically mostly no longer handsome and playful they no longer correspond to today's conditions.
