Have an xbox 360 want to switch to an xbox one s can i use the controller on the xbox one s? And can I play minecraft (xbox 360 edition) on the one s?

You can't use the controller and, to my knowledge, you'll have to buy Minecraft again.

You can use the controller, but you need a Windows 10 PC.

You have to have a laptop or PC. You connect the controller to the computer, then you open the XBox app and connect your XBox and start streaming to the PC via the app. Minecraft XBox 360 Editon you have to buy Minecraft Bedrock and then you click on versions and then you are in the old Minecraft version (at least that works on the PlayStation 4).
