You do that in the Microsoft account settings.

It just depends on who the Microsoft account is running on. If it runs down on you and your age is stored, you can't do anything. If it comes down to the name and age of your parents, you can take a look at the Microsoft settings. I don't know where exactly, but you should find it there

If your age is stored behind your email address, it may also be that you can't change it because you are not of legal age and therefore the setting is active and only then can you change it. I don't know if you can change the email in the background.
