Well first of all I don't have a lot of experience so don't be surprised about the strange question: I would like to play fortnite or gta or Fall guys or anything else yes but no experience what to buy so ps5 or 4 or pc or xbox would prefer to play with a controller?! Does anyone have any tips or recommendations?
Based on what you describe, I would recommend a PS4 / 5.

Well, I don't know what your budget is, but a PS4 should be a good price-performance choice because the games are specially optimized for consoles. And everything is going well. PS5 would of course also be a good option. It's just pretty hard to get at the moment.
I can only recommend the PS5 for GTA.
I'm currently still playing GTA on the PS4, but if you don't have a console yet, it makes sense to go straight to PS5. GTA Online came out on PS3 back then, and today updates for GTA Online are only available for PS4. That means that at some point there will definitely be no more updates for the PS4 and the updates will make the game off. A really big new DLC comes out every six months. On the other hand, you can only play GTA online on the ps5 in the coming years and nobody knows how it will go.
I wouldn't play GTA Online on the PC because there are a lot of modders who hack all the lobbies. You have that much less on the PS4. On the other hand, you can of course do more with a PC than with a console and you can also connect a controller.
