Is the word Nintendo copyright protected if you omit the ®?

1. Punishable if it is in my Discord server name and I get nice boosts or should I just shorten it to "Nin" in any case?

Yes, these are registered word and figurative marks. Using them without permission is a violation of trademark law.

All logos, drawings, songs, films, images, etc. Are copyright protected… With or without registered characters.

So if you have that as a discord server name, it is not punishable. I'm on a few servers that have Nintendo in their name and after several years nothing is still happening. And it's just a name. The N64 symbol is also not punishable and even exists as T-shirts that are not official. There's even a Youtuber called Nintendo that uploads fake trailers. He was also not banned.
