I bought a 500GB ps4 slim and would like to put in a 1TB hard drive from my old ps4 slim, does anything happen with the guarantee?

I do not know. But you can connect the hard drive via USB if possible, there shouldn't be any problems.
Usually your guarantee should still be there. If you are unsure, you can write to support.
The hard drive is installed in such a way that anyone can change it. Think Sony intentionally did it that way. It is only hidden under a clipped cover and has only one Phillips screw that holds the hard drive in place and looks different from everyone else in the console. You do not have to remove the guarantee stickers. That means everything.
If you have to send it in, just swap the hard drive back.

No, you won't destroy any guarantee stickers. I'm not 100% sure, but Sony designed it so that you only have to loosen one screw. Which holds the hard drive.
You can also get on top or from the side. Cover is only clipped on. That's why the Slim has such a small cover on the side, because that's where the hard drive is. The old normal PS4 has the hard drive under the narrower top cover.
Fix PS4s and it looks to me as if Sony thought so. It was exactly the same with the PS3. Even laptop manufacturers usually design it so that you can take it out. Back then more with the HDDs, now the SSDs are mostly soldered or under a cover because the devices are so thin.
