I have never played the games. Do not know her. But after playing ghost of tshusima I figured that might be interesting too. The gold edition is on offer in the ps store. Is it worth?

Assassin's Creed 3 is really awesome so I think and the other 2 you mentioned I didn't play
Assassins Origins is good too.

Is a good range. But Assassin's Creed 3 is a bit older, it was PS3 time. You can tell from the gameplay. Nowadays that wouldn't be a good game, but story and open world are very well done. Black Flag was my favorite part back then. Odyssey is no longer a classic Assassin's Creed, but I found the world to be very well made because it is so big.
If you don't know them, they're really good. The disadvantage is that it is more or less the same, similar to CoD. For some, the 7th part is still fun, after the 3rd or 4th I lost the desire for Assassins Creed
Hm played a few parts myself but I think the second part is the best because of the story but other parts are also very good, I heard Black Flag but it should be the worst part but everyone has a different opinion.
Ghost of Tsushima is more the newer ones, from Assassin's Creed Origins to Odyssey to Valhalla. The older ones are good but then slightly different. The Ezio trilogy in particular is pretty good there. Is just more designed for stealth and clandestine tracking. Have a look at a short lets play on Youtube from Assassin's Creed 2, then you see if you like the older ones
PS.: I would play the Ezio Collection before Assassin's Creed 3 anyway, because it has a story as a present-day character that runs through to AC3 and ends there. AC 2 is one of the best among die-hard fans
