My recommendation is to buy an IPS panel for both gaming and video. This offers you both a very good speed, as well as excellent colors and contrasts. Everything above 120Hz is very good for gaming, of course also 60Hz for video long ones. G-Sync is a nice thing if you can use it, but Freesync is also possible with Nvidia. In both cases you benefit because it reduces tearing and ghosting.
Whether WQHD or 4K is more a personal decision. In my opinion, 4K only makes sense from 32 inches or more. For a 27er WQHD is completely sufficient.
I personally use the 27 'Acer Predator XB1 with an RTX 2070 Super - I can definitely recommend it.

With Nvidia FreeStyle you can activate HDR without an HDR monitor. That makes more sense at the moment because very few games support HDR on their own. 600 euro is definitely expensive - for mine I paid 450 euro at MM.

Check out Nvidia FreeStyle and Nvidia Ansel. It's something like ReShade if that tells you what. I personally find it very successful.

The Samsung has only one VN panel, unfortunately.
The first Acer B277 is the worst of the 3 (because of its 4ms response time). The Nitro and Samsung are almost identical with an advantage for the Acer. The Acer Nitro has a much better contrast and a smaller pixel pitch, which makes the picture sharper and crisper in the end. The power consumption of the Samsung is also twice as high (it is also twice as large). In general, the 4K models are a bit worse in technology than the WQHD models.
