Streamlabs OBS looking for a game to capture image replace?

It always says "looking for a game to capture". Put my Twitch logo where e.g. It says "We'll start soon", I use Game Capture

You simply create a new scene in which you then add an image as a source

As long as you have not started a game, you can then display this scene so that the audience only starts your stream immediately or see a pause or whatever screen and after the game is running you switch to the scene in which you are showing your game.
