Access Twitch API, process data and insert into DiscordJS RichEmbed. How does it work?

I'm about to program a Discord Bot with NodeJS and Discord.js. There I want to put in a twitch integration that scans every 2 minutes, if certain channels are online and then uses a Discord RichEmbed to output data and post it on the server. How that works with the RichEmbeds I just do not know how I can query every 2 minutes if a channel is online and how I can retrieve and insert the data online. Is that in an extra JSON file?

In discord can channel be offline?
