Hey I've been interested in WOW for a while now, I just watched the BlizzCon and now I want to play it.
However, I would like to know how WOW works as a freshman (you can only see high LvL player on YT / Twitch etc…) or should you already start with a LvL boost?

No. Level up, learning how your class and game mechanics work.
If you use a level boost, you will only be shown the basic abilities of your class.
The game will teach you everything, if you do not use a levelboost. If you go to Level 100 or something right now, the game knows that you do not want to know anything about "learning" that you already know everything.

All old extensions (AddOns) become part of the base game when a new extension appears. Only the latest extension must be purchased separately, this is currently Battle for Azeroth (BfA).
With the basic game you can play until level 110 games and with the acquisition of BfA then up to level 120.
Or do you mean with the AddOns the modifications, which you can install yourself for example. To make the interface look different?
I would not recommend you Lvl boost, because the normal leveling, you learn how your class works and you generally learn the basics! As far as your low level is concerned, that's no problem. I also often make a new character and there are no problems! You can always start with WoW and have no problems!

Moin have a little question just in the character creation and would like to create a Mage are there any benefits in the Horde / Alliance / descent?
The different breeds have certain bonuses. In the character creation right click on a button with the inscription Info or something like that. Then you will get a window with additional information about the respective breeds.
By and large, it does not matter which race and which faction (Horde / Alliance) you play.
Horde and Alliance are enemies, you are then attacked by the guards of the other faction if you get too close and if PvP is active also potentially by the players of the other faction.
Hey again thanks for your tips I've now created a Mage… Currently lvl 11 but it goes ahead and is really fun ;-) how does the expansion system actually? I now run as a low lvl first 1.burning crusade after that if I'm a little higher leveled 2.wrath of the Lich King and so on to bfa / shadowlands… 🤔
Current status
Since the last revision of the Level System you will be asked from Lvl 60 if you would like to go to TBC (The Burning Crusade) or to WotLK (Wrath of the Lich King). Depending on what you decide for, you will then receive a quest that leads you into the region. You can still enter the other region and even the most, if you want.
From Lvl 80 you get another selection, but for Cata (Cataclysm) or MoP (Mists of Pandaria). Here you can also do a quest that will take you to the chosen region of the expansion. You can also enter the other region.
From Lvl 90 you will come to the areas of WoD (Warlords of Draenor).
From Lvl 100 you will come to the areas of Legion.
From Lvl 110 you come to the areas of BfA (Battle for Azeroth).
Starting with patch 9.0 (preparation for Shadowlands)
As of the Shadowlands preparation patch, the leveling system will be completely reworked.
At that time, the maximum level will be reduced from 120 to 50, and the maximum level will be raised to 60 after Shadowland's appearance.
All characters get a lower level than they currently have.
Also it will probably be possible to level up from Lvl 10 (after the start zone) in any expansion area to get to Lvl 50.
Whereby new players will probably be sent to the areas of BfA after a new starting zone to play until Lvl 50.
Twinks, however, can freely decide after the start zone which extension area they want to enter.

Another little tip.
From level 10 you should be able to enter dungeons.
Buy the tabards of the respective races in the capitals of your faction and wear them in the dungeons. The killing of enemies gives you reputation there by the respective factions. With a higher reputation, the prices of e.g. Traders lower and the highest reputation level "Awesome" you can also buy the mounts of the other breeds of your faction. You can basically buy the mounts of your own breed.
