If I want to extend my Twitch Sub, then I'm not a Sub for a day or a few hours, does Twitch see that when I expire I'm non Sub for a few minutes and then still consider extending it as a continuous month?

If Twitch automatically renews your subs, it will seamlessly transition into the next one. If you renew them manually, you have a certain period of time (at least 2 days) during which the sub is still recognized as ongoing.
