Why can't you change the difficulty in Far Cry 5?

I'm currently playing "Far Cry 5" on Xbox One with my girlfriend. Oddly enough, unlike me, she can't change the level of difficulty, even though we both have the current version of the game. I, on the other hand, can even change the difficulty in my running game. Does anyone know why this is?
