That depends on the file size of the games. Some games are bigger than 60gb others maybe 20gb.

In general, the number of games you can install on the Xbox Series S varies. There can be more than 364, but also 4.
In your case, GTA would probably use around 60GB, Fortnite around 30GB, Minecraft 0.2GB and COD around 150GB.
You only have about 123.98GB left, of course it depends on which Call of Duty you mean.
It depends on what you play with some games. The download is optimized (e.g. Forza 4) because the 4K graphics are not required for the Series x, but that doesn't make the games that much smaller
