I added 5 euro Xbox credit today and wanted to get the Xbox Game Pass but I can't buy it because I have to pay some remaining balance. How can I buy it without the payment method?

Ehm the normal Xbox Game Pass doesn't cost 5 euro but 9.99 euro, so please don't be surprised.
As already noted, the Gamepass costs 9.99 or Ultimate even 12.99. So you won't get very far with 5 euro.
Apparently you already have an existing subscription but due to a lack of credit it could not be paid for, hence "because I have to pay some remaining amount".
So Microsoft would like to have the outstanding money back. And so that there are no more arrears, you now need a secure permanent source of payment.
This is either a credit card or PayPal.
If you do not want the gamepass as a permanent subscription, I recommend canceling it immediately after completion. Alternatively, in addition to prepaid cards, there are also Gamepass cards in stores.
