4K and FPS don't interest me that much, because I only have a 1080p monitor and believe 60fps

Of course it's worth it. Especially because you can then also play new games and you are simply up to date on what's going on. You have to know whether you do that now or later.
The Xbox Series S is also a good entertainment console and, as you already indicated, offers faster loading times.
Why not the X series? I think that the change would be worthwhile if your old XBox is too loud or you feel like raytrcing or just some graphic-intensive story games.
60 hz and 60fps is the same right?
Even if the Series S is not bad for your requirements, I would rather use the Series X in your place. It has more memory, upgrading the memory costs 100 euro or more. It has a drive, so you can buy or sell used games and you don't have to rely on the MS Store. In addition, you have the console for 7 years, maybe you buy a new monitor after all.

Frames per Seconds (FPS) is what a computer can calculate and forward in terms of images.
