I'm currently playing the minecraft: xbox one edition and I wonder if I can play with my friend (who plays on the switch)

I guess not the only crossplay currently available between the Windows 10 edition and the xbox.

If on the switch is the Bedrock edition then that works

That's fine. Supported are you.a. Xbox One, Switch, Win10 and the Mobile versions.
These Minecraft versions are btw. Called 'Bedrock Edition'.
