The monitor has 23.6 inches, full HD and 144hz and two "normal" HDMI connections.

1. Would the monitor be suitable, as the monitor has a full HD resolution and 144hz and the Xbox series only has up to 120fps.
2. Can I play at 120fps if the monitor does not have HDMI 2.1?

Yes, this monitor would be perfectly suitable for the Xbox Series S, but also for any other console.
2. Can I play at 120fps if the monitor does not have HDMI 2.1?
Yes you can, but only in 1080p, which shouldn't be a problem. You only need HDMI 2.1 if you want to play in 4K at 120fps or higher.
