There will hardly be any new games for the Series X. But it is apparently backwards compatible. This means you can play games on the Xbox One and partially on the Xbox360. Many at least.
In itself, it is currently not worth spending 500 euro on a new console. There are still some technical flaws. So first of all I would recommend the Xbox one.

The Xbox one was a bad console, little performance, few exclusive titles and too expensive, the Series X is better in all respects. It is currently just more expensive and there are still a few games because it has just come out. In the long run you will be happier with the Series X because you will also be able to play all Xbox one / 360 / Classic games on the Series X.
