I've been collecting the hobby old consoles for about a year now and so far I've got a GameBoy Color, Gameboy advances, Nintendo 64, a Playstation 1 + 2 and a GameCube since these are the consoles I really want. Do you have any recommendations from old consoles (preferably under 2004)

From my point of view, still missing various things from Atari and commodore such. The ST2600, the Commodore 64 or the Amiga… Sure, these are not purebred consoles according to the motto: cassette in and out, but were 99% used to play.
