Are there any advantages or disadvantages or changes when playing on the PC even though these games like (The Witcher Wild Hunt, Detroit: Become Human, Horizon Zero Dawn…) originally appeared on the PS4. Should I expect poorer graphics and performance or how is that.
And is Steam actually a good choice to buy games there, or should I get them in other ways?

It all depends on the game and the respective developer. If the port is well done, the game will run properly, if the port is badly done then not. A look at the ratings of the respective game often helps.
Fortunately, there are often mods for poorly ported games that can significantly improve the gaming experience.
Steam is usually the best (and only) choice for a lot of games.
