I have now been able to get hold of a ps4 cheaply and wanted to ask whether if I get psplus now and get the ps5 around January / February (depending on when you get one) I still have the psplus start playing the ps5?

Since PS Plus is linked to your Sony account, this should be possible without any problems (my Plus will also run until February).
