I often see the YouTuber playing the game and you can see the gameplay very smoothly.

My 1st question is what do YouTubers use to film, for example, the screen of a D (and very fluently)?

Capture card. A device which is connected with HDMI connections between the PS4 / PS5 etc. And the monitor and then again via USB cable to the computer. This device is then controlled by the computer and then records when you want and how you want. So what from the console or PC (depending on what you have plugged in) goes through the HDMI cable into the capture card and only then into the monitor.

As the others say, they either use a DS with a capture card or an emulator on the PC.

As already mentioned, a capture card is used for this. You connect one end of this via HDMI to your device that you want to capture, the other end is connected to your PC. You can then access the video signal via various software - e.g. OBS or Elgato's own software.

With handheld consoles like the DS, however, it becomes more difficult as they do not have an HDMI port. Such consoles have to be rebuilt anyway, and getting such a device has become relatively difficult (at least I haven't really seen many offers lately). Therefore it would be easier to use an emulator for e.g. DS, 3DS or PSP.
