I use the pc to play Minecraft and Fortnite and so on and am also on yt and twitch. Is the following setup good or sufficient? Made the SSD a bit lower (for the last question) and took a 2tb hdd. The CPU cooler is still coming!

Except for the PSU, this is a very solid system. I would rather go for a Pure 11, otherwise great.
Would have configured the same way in your place. I have good advice for you. Rumors of a release of new NVIDIA cards later this year are growing. If you maybe wait a year you get more performance for the money than with an rtx 2070. And as long as you want to use ray tracing including dlss you don't have to see any reason to buy an rx 5700xt
It doesn't look bad in itself, but the best thing to do is get a motherboard with a B550 / X570 chipset, and you're ready for the future. (Be warned, I mean with B450 you have to do a BIOS update for Ryzen 3000, but I'm not sure if the manufacturers do that)
I think this configuration is very good. What you could think about would be the RTX 2060 Super. There are already cheaper than this 2070. And the 2060 S is almost equally strong and also has 8GB VRam.

If you have no idea, you shouldn't rush into the keys. First of all, the mainboard is already ready for Ryzen 3000. That is all B450 / X470 boards from MSI in the Max version.
Second, is a B550 / X570 board for which Ryzen 3600 is wasted money. The CPU has a TDP of just 65W. And even with the highest overclocking, AMD only releases 130W. And why the hell, you should need such a high-end board. It's totally pointless. Even for the Ryzen 3000 8 Kerner, a B450 is completely sufficient.
