My fav streamer made a 12h stream 1 week ago and I missed part of it and just wanted to watch it. If I go to his profile and then he comes to videos, but only those from 3 days ago or so…
Why is that and is there a way how I can still watch the last stream?
It may well be that your streamer has disabled this. A lot of people do this on Twitch because Twitch can easily get banned if, for example, music is played that is not licensed.
He also has to release the stream for this if he has not done that, there's no more possibility unless he is on Yt

If you can't find it on their site, then the streamer has probably taken the stream offline so that you can no longer watch it afterwards.
The streamer can decide for each individual stream whether to leave the VOD on twitch or take it down. There can be several reasons for this:
Music wasn't copyright free
the streamer was not satisfied with his behavior
forbidden things or things happened for which he could get a ban.
If no one has recorded the stream and uploaded it to youtube, there will be no way to look at the stream.
