PayPal and Twitch payments?

I started streaming 1 month ago and wanted to know how it is with donating.

From how many euro do you have to pay taxes? Or what kind of payments do I have to watch out for? And up to what amount can you keep the money completely?

You are a minor and may NOT use PayPal at all!

The use of PayPal is generally only permitted from the age of 18 - without exception!

These "donations" are not real donations, but taxable income and must be reported to the tax office - regardless of whether taxes have to be paid in the end.

Donations are only allowed to corporations which are not for profit.

If so, it would be more of a donation.

but this is also not the case since one can assume an exchange of services here. Thus (in addition to the intention to make a profit, presumably) there's stpfl income.

If these are below 256 euro, you can assume other income if it is not very regular and rather small amounts.

Otherwise there would be income from trade §15 EstG thus EÜR and Est due annually.
