My PC is now almost 2.5 years old. Now I would like to upgrade him.

CPU: AMD Ryzen 5 1600X
GPU: Manli GTX1060 6 GB

PSU: 600W BeQuiet ATX 80+

Now my question is whether it fits the price / performance. I have already dealt with it extensively, but still wanted to ask again. I think the 600W of the power supply should be enough. Likewise the TDP of the cooler.
Two screens will hang on the PC, one HDMI (24 ") and the other with DP (32"). The PC is used for video editing, image editing and gaming, and occasionally streaming on Twitch. Shooters like COD, Battlefield or RB6s are mainly played. I have only assembled older PCs so far, are there things I have to consider? Or can I simply replace the parts bit by bit?

That is definitely enough. Unless you want to overclock. Then I would rather recommend a WaKü.
You can do the upgrade like this. Mainboard doesn't need a new one, just make a BIOS update for the old one. The processor fits your purposes
The RAM is very expensive, I would rather use a kit without RGB. 16 GB may already be sufficient.
As a graphics card, the RX 5700XT would be a good alternative for the money (or for less).

The problem with the mainboard is that my old one only has 4 SATA connectors. That limits me quite a bit, because I have several hard drives and a CD drive.
Would you personally prefer the RX5700XT to the RTX2060-Super? I really like the look.

No, I have no idea about overclocking. I think everything stays that way.

If not: RX5700XT (Here I recommend the Red Devil and the Nitro +)
LuKü is enough, but the boxed cooler is not recommended.

The ryzen 7 3700x comes with a very good rgb fan that has a relatively good cooling capacity

Can you do that then take the Ryzen 7 3700x if you want to cut videos with it. RAM can be made to 32GB, 16GB is enough, but I think so too. As a graphics card I would probably use the 8GB Gigabyte Radeon RX 5700XT

4 SATA connectors should be enough. You will hardly have more than 3 hard drives. Otherwise CD drive away or ne M2 SSD on it
