I'm 14 years old and would like to have GTA V for xbox one, but my mother is very strict (I would pay it myself)

This game is from 18 and that has reasons. Even if you feel terribly grown-up at the age of 14, you are still a child. You can't assess much that could badly affect your development at all. Enjoy your time as a teenager and accept that there are limits. Later, as an adult, you can play whatever you want. You will then have other problems. If you were to buy a game from 18 onwards for me, the XBox would have been gone for half a year.

Your guardians (mom or dad) are the only people allowed to play the game. That's why you'll only be able to buy it in your own home.

As you write yourself: mother is the boss. So why do you want to mess it up with her for an old game if you secretly do it?

I would definitely clarify it with your mother. Before you just buy it so you should at least listen to your parents' arguments and maybe even think again why you really want it so urgently.

I personally started the game at the age of 14, as almost all of my friends played at that time. It was really fun and with some restrictions, my parents were okay with it (but all parents have their own reasons and yours certainly know you best). I do not think that my friends or I (conspicuously) suffered any damage, but there were also plenty of cases in which the intense playing of shooters (which is mainly GTA V) has brought psychological and physical damage.

In the end, I think that you still know best what is ok for you and what is not. Of course, to deceive your parents is of course not, so ask any case. If they immediately say no, try to get them to put their arguments to you and then think carefully about why you want to play GTA yourself.
