On the Xbox Series X it looks sooo much better, especially because the Xbox Series X supports ray tracing from AMD. Will the PLaystation in general and in Minecraft ever support AMD ray tracing?

That's why the game runs as a PS4 or Xbox One version on the next gen consoles and therefore not so well. You have to wait until the game is either optimized (this means that a Minecraft version will be released that will only run on PS5 and Xbox Series, and are priced free for buyers who own the last version - just like Forza Horizon 4, Halo MCC or Ark) or that a standalone next gen version will come out. (Something you know from GTA V, only this time it says whether the game is free if you have the load capacity of Minecraft or whether it then - like GTA from 360 to One - also costs, which I rather doubt)
Then there's also to be noted that Minecraft does not allow ray tracing on the Xbox Series. - yes, the Xbox is very powerful and supports ray tracing in more and more games but this is not possible in Minecraft. - the reason: first of all it is the Xbox One version, and the Xbox One is unfortunately too weak to use proper ray tracing.
Yes in Minecraft there are two options to activate ray tracing in the graphics settings, but these settings are not intended for the Xbox. You can also find the 2 switches in the mobile version, Nintendo Switch version, and on the Playstation 4 version. The switches are actually there for the Windows 10 version, as currently only the Windows version can also activate ray tracing, and only if you have a compatible Nvidia graphics card installed. I tried out the ray tracing myself, I have Minecraft for Windows 10, mobile phone, Xbox One X and Series S, my flatmate has a PC with a compatible Nvidia graphics card - I was able to use this texture package, which I got from MCPEdl had to use, real ray tracing was shown, but with my Lappy without a graphics card, on my mobile phone, and even on the One and Series S the game was not allowed. I couldn't turn on the ray tracing functions in Minecraft on the Xbox. It is also clear, because Minecraft only allows ray tracing with a built-in Nvidia graphics card, but the Xbox Series has one from AMD. Therefore, ray tracing is currently not possible on the series. You can't even download the ray tracing packages from the Minecraft Marketplace. Only if you have an Nvidia graphics card. With my Lappy in the win 10 version of Minecraft, the packs are displayed, but I can't download them. With PS Xbox and other systems, the packs are not even displayed in the Marketplace.
In the case of the PS5, the PS4 version of Minecraft does not work either, but unfortunately I can't answer whether the PS5 will raytracing for Minecraft at all.

The Legeacy version, as you call it, was standard for the Playstation for a long time after the release of the Bedrock Edition, as Sony shot against Bedrock and Crossplay. There was no Bedrock Edition for about a year because Sony has to behave childishly again.
And when the time came, well. The Bedrock version on the Playstation does not run particularly smoothly, it hangs, has problems logging in and nothing has changed in terms of performance in Minecraft on the Ps4. Those are the consequences of playing on such a platform (Sony Playstation).
Even you Nintendo Switch runs much better on me and above all without any problems. And it is one of the weakest consoles currently.
I simply recommend everyone who wants to play Minecraft not to play Minecraft on a Playstation. The versions of Xbox, Switch & Windows 10 are just better and offer more options. (And are also safer.) The Bedrock editions syncronize very quickly on my Lappy or smartphone. It annoys me every time that the Xbox version takes so damn long.
