Hi, I've been playing GTA V on PC for 5 years now. For about 1 year I'm shown in online mode that all players leave the lobby. Then I'm always alone in online mode.
I thought it was the internet connection, but then I noticed that with my XBox I can easily play online games like Red Dead Redeption 2 and Battlefront 2.
What could it be?
Interruptions may be caused by an unstable network (LAN cables offer a much more stable connection than WLAN)
On the other hand, the game is already relatively old and I can imagine that more and more server power from Rockstar used for other things, which could lead to occasional failures. A vulnerable software implementation in terms of lobbies, but has been known for some time in GTA V.
Try to change your MTU value or just reinstall the game.
