The current generation of the XBox is the Xbox One X.
The Xbox One S is a stripped-down version of this that can be purchased more cheaply.

The new XBox is coming in November. So either you buy the new one straight away or you wait a little longer (when the new console is out, the old one is offered cheaper). Or you buy them used.

The One is the current console generation from Microsoft.
And the One S is a slightly revised and improved model of the first One. Quasi the current standard Xbox and in terms of performance comparable to the PS4.

The first one no longer exists. The One S is slightly improved compared to it and has replaced it as the standard Xbox One.
The stronger One X is more comparable to the PS4 pro but also costs more.
