I have a long time trouble with the Minecraft windows 10 edition with my TV, when I play some time the TV goes into a "sleep mode" when it does, I have to turn it off and on again, this is very annoying in PvP situation in which I'm then clearly disadvantaged.Ps: I own the xbox one x and a television by Grundig.

You can bypass the sleep mode setting by signaling to your TV that you are still there. You can do that by, for example, playing around with the volume for a short while (turn 1 louder and lower again), which resets the timer until it returns to idle mode.
