Until when is the PS5 sold out?

Do you think the PS5 will be available for Christmas at Christmas or do you think it will be sold out, if so by when will it be sold out (estimated)

Sony can already produce a lot in advance. I think it is unlikely that it will sell out quickly. At most that could happen at Christmas.

In retrospect (earlier launches), there were short-term limitations, but you could always get hold of a console via detours.

If you want to be on the safe side, I would still pre-order the part.
