Is my controller broken?

Whenever i play a gta5 mission on the ps4 in which you have to fly the plane the controls go crazy the plane pulls either up or down sometimes even the rudders are out of their position

If you fly a plane without a mission, is it?

How can I change that?

This is only possible in the Playstation settings, where you can change the key assignment.
