I started streaming on Twitch. The stream runs super smoothly everything is fine but on the monitor is the game even though I have constant 200FPs. Streaming over the GPU (Fortnite, Valorant) can anyone help me?

Making Vsync out can help, or lower the bit rate for the stream a bit.
Maybe put the recording mode (if you use OBS) on the window itself and not the normal screen recording
Maybe. First of all, try streaming with VSync enabled and see if it gets better. The second option would be to limit the maximum frame rate in-game (e.g. To 90-100fps) in order to give the GPU room / space for other tasks.
Depending on the program and settings (bit rates / quality) that are used, the GPU not only runs at 100% for game calculation in this case, but also has to encode.
Ever tried to run the stream on CPU? The R5 26oo shouldn't have any problems with that and that would also be option number three to try.
