I've wanted to start Twitch for a long time. I have enough equipment (OBS 3 screens, good Wi-Fi, etc.) but I'm not sure what to stream, which games and what to say during a real talk and such. Do you have any tips?

Stream the games that you would also play offline and in which you may. Are good. A game that you don't enjoy is of no use to you. And talking comes by itself, interact with your chat, ask questions and the rest will follow.

That doesn't really matter. The main thing is that you enjoy it.
There are channels with games… Nobody would think you would get viewers with them and they still get them.
Often it is also because of the twicher or two. Do you look good, do you have a sympathetic voice, do you already have the first to watch you.
Live talk… It comes by itself. Let your viewers make suggestions or just tell about your day.
You will already notice that it is happening.
Just do what you enjoy most in relation to the games or maybe something else like painting or handicrafts or cooking or whatever. There are unlimited possibilities.
In my opinion, doing a serious big real talk without doing anything else on the side only makes sense if you have enough viewers for it. So that whoever is there hears it at all and maybe something like a discussion can take place.
What you talk about besides gaming or whatever, will come up spontaneously. You just say what comes to mind and what you think is appropriate. So real talks can come about spontaneously, even without real viewers. But it's not tragic. I think you should just talk when streaming, that's the most important thing. What EXACTLY you say is not that important as long as it is appropriate in itself. Of course, this will make your stream more interesting before you say nothing.
By the way, it becomes easier and more natural if you have someone who plays along and with whom you can chat while streaming, but it doesn't have to be.
So I never prepare anything related to what I'm going to say before the stream. It just happens. Is a bigger topic when you have enough viewers and you want to get a message out or something like that. You can of course prepare something.
But mostly I also play with viewers and chat with them on Discord. So in my case, that's more of a draw for people than me playing alone and entertaining them. It automatically becomes funny when you gamble and chat with one or more people.
Just be yourself when streaming and don't pretend too much. As long as you enjoy streaming, everything is fine. That's the most important.
