Now I want to take the next step and get myself a streaming PC. The image of the PlayStation I would like to continue via capture card to the PC. At the PC I would like to work then with 2 screens. Since I do not really have enough idea to be able to assess which PC's can give me what I need and what is good and what is not, I hope to get some answers from experts or experienced persons.

You need a PC with a CPU that has 8 cores / 16 threads, a Ryzen 2700 would be enough. For your CPU, it should be a good cooler, because the CPU is indeed used to a high degree.
In addition then at least 16 GB of DDR4 RAM with 3000 MHz, and a graphics card that creates Full HD in Ultra Settings, eg. An RTX 2070 would be optimal (and future proof).
Sorry that so much information is missing. Actually, I mainly play FIFA and GTA. Budget technically it would be nice to be able to stay below 700 euro. Of course, I do not want to buy any scrap, but I do not need the best of the best.

Here you have a strong future-proof streaming CPU, but because of your low budget, I've only done a "small" graphics card. (Which still manages most games on "high" settings)
You should not slim any more, otherwise save easy, because it does not help, if you buy a new PC is not better than your previous PC…
