No, Twitch gets the money from you via Paypal and sees your Paypal name accordingly. Your Paypal data will not be forwarded to the streamer (why?).
The streamer gets his share of the sub paid by Twitch, but does not see your Paypal name, but can only understand the subscribers via the twitch name who has subscribed. (If you anonymously give away a sub, you will not be able to see your twitch name.)
