I'll buy an Xbox Series X soon (no console war please) and a 4K100hz monitor with HDMI2.1. For example, if I play Dirt 5, will the Xbox play the game over 100 FPS or only 60?

Even 300Fps can be displayed, but you will only be able to see a maximum of 100Fps, since your Montior only has 100hz and therefore it can no longer record. The monitor does not affect the performance of your X-Box either.
The Xbox shows me what my TV supports. If the Xbox states that it does not recognize 120Hz in the monitor, then the question is what it does 🤷🏻♂️. But I won't see that until December anyway.
In some games you can also set how much Hz the game should give back, because you can see whether Hz are given. But if the monitor has 120Hz and you play XBox with it, your monitor should automatically enable max 120Hz.
