To my question: I have played Skyrim several times since its release in 2011, so I know a lot by heart, but now I have it on Xbox one again and wanted to ask you once because mod's work on Xbox if there's a mod the game totally changed, so an ultimate mod so that people who have played the game often have something to discover and do not know all the ways by heart, I have looked a little myself but unfortunately found nothing suitable, now I hope so someone can help me here.

There's no such thing on console. There's enderal on pc. This literally makes skyrim a new game
No, such mods don't even exist on the PC. You have to go out of your way to find and install the many individual mods, just like everyone else. In my craziest times I had installed around 120 mods just for graphics and sound.
There's a total conversion (enderal), which uses the basic building block of Skyrim and all the components in it to make a completely new game out of it. A huge world with a much better story than Skyrim, better character system and fantastic voice actors. But you can only dream of it, because something like that is only possible on a PC.
