At the moment I only see what I think is really cool from the Xbox Series X Hands-on, but when will something come from Sony?

Sony announced something similar just under a week ago. As part of "Try! Playstation 5" (YouTube Gaming Week), 12 selected (Japanese) YouTube channels will have access to the PS5 from October 4th.
